600 ml milk (ideally hay milk)
400 ml heavy cream
120 g semolina (soft wheat)
2 vanilla pods (alternatively: 2 packets of vanilla sugar)
80 g brown sugar
1 pinch of sea salt
2 eggs
Tip: If you don’t have vanilla pods, you can use vanilla paste or extract.
Preparation
Prepare vanilla: Slice the pods lengthwise and scrape out the seeds with a knife.
Heat milk: Add milk, cream, vanilla seeds, sugar, and salt to a pot and bring to a boil while stirring.
Add semolina: Remove the pot from the heat, sprinkle in the semolina, and stir thoroughly. Then cook over low heat until thickened. Remove from the stove and let cool slightly.
Separate eggs: Whisk the yolks with 2 tbsp milk and stir into the lukewarm semolina pudding.
Beat egg whites: Whip the egg whites until stiff and gently fold in – this makes the pudding airy.
