SWEETS

Ingredients (for 4 servings)

  • 600 ml milk (ideally hay milk)

  • 400 ml heavy cream

  • 120 g semolina (soft wheat)

  • 2 vanilla pods (alternatively: 2 packets of vanilla sugar)

  • 80 g brown sugar

  • 1 pinch of sea salt

  • 2 eggs

Tip: If you don’t have vanilla pods, you can use vanilla paste or extract.

Preparation

  1. Prepare vanilla: Slice the pods lengthwise and scrape out the seeds with a knife.

  2. Heat milk: Add milk, cream, vanilla seeds, sugar, and salt to a pot and bring to a boil while stirring.

  3. Add semolina: Remove the pot from the heat, sprinkle in the semolina, and stir thoroughly. Then cook over low heat until thickened. Remove from the stove and let cool slightly.

  4. Separate eggs: Whisk the yolks with 2 tbsp milk and stir into the lukewarm semolina pudding.

  5. Beat egg whites: Whip the egg whites until stiff and gently fold in – this makes the pudding airy.

  6. Serve: Enjoy warm or cold – best with cinnamon sugar or fruity cherry sauce.

Tips for beginners

  • Avoid lumps: Always add the semolina slowly while stirring constantly.

  • Serving idea: Also delicious with applesauce, berry sauce, or compote.
